Do you have food safety policies in place?

Having food safety policies in your establishment is not to completely eliminate risk, there is no such thing as zero risk. Having food safety policies help you to minimize the risk factors that cause foodborne illness (food poisoning). Health inspectors expect the person in charge to understand and know the potential risk factors, and to take steps to control those risk factors that can lead to food poisoning. Having and following food safety policies helps the person in charge focus on the food safety risk that may occur in the establishment.


When the health inspector arrives, they would expect the person in charge to be able to explain that the dish machine is not working, the switch to manual washing has been made, and service for the dish machine has been requested. If the health inspector detects an issue with the dish machine before the person in charge even knows there is an issue, this does not give confidence to the inspector there is a food safety system in place in the establishment.

Food safety policies can help reduce the risk of causing a foodborne illness, keeps the establishment in compliance with health department regulations, and builds trust in the brand with the public.
